Yonna: Campo de Borja, Spain
Yonna is the result of the collaboration between Mounir Saouma, winemaker and owner of the Burgundy negociant Lucien Le Moine, and Javier Luzon, the manager of Bodegas San Juan Bautista in Campo de Borja in Spain.
The 2004 is their second release of Yonna, and is a blend of 40% Grenache (100 year old vines) and 60% Tempranillo (40 year old vines). The grapes are hand-picked and the vinification is followed by the winemaker of Bodegas San Juan Bautista under the guidance of Mounir Saouma. Each varietal is vinified separately. The Grenache is cold macerated for a week before the fermentation that occurs during a long subsequent maceration of 25 days with frequent delestages. The Tempranillo is macerated for more than 20 days with microbulage. After pressing, the wine is sent to 100% new oak barrels from the Les Jupilles forest, the same tight grain French oak Mounir uses for his Burgundy wines, where it stays for a year, with gentle lees stirring. The wine goes through a late malolactic fermentation the following April and is not racked until bottling. The wine is bottled per gravity without pumping and with very low sulfur.
