The “Mario Schiopetto” assemblage, 55% Chardonnay and 45% Tocai Friulano, is the best example of Schiopetto’s vineyard. A hand-picked harvest and the soft press are followed by the fermentation in the absence of sulfur dioxide. 60% of the fermentation takes place in stainless steel, with 40% in oak barrels. With a strong, yellow and hay-like color, the wine has an extensive perfumed aroma of balsamic and pastry-shop sensations with balanced roasting and a vanilla fragrance. Mineral and black tea scents accompany the persistent finish. First vintage was 2002.
