Lucien Le Moine: Burgundy, France

The artisanal negociant of Lucien Le Moine was founded in 1999 by Mounir Saouma with the sole purpose of “raising” wines selected from the best Premier and Grand Cru vineyards of Burgundy.  In just a few years Maison Lucien Le Moine has gathered astonishing accolades, and Mounir Saouma has become the brightest young star in Burgundy.   

Mounir limits production of his wines, typically working with only one wine per grower. The selected lots arrive, barrel-by-barrel, at the Le Moine cellars in Beaune. Transferred to specially coopered Seguin-Moreau barrels (80% with oak from the tight-grained forest of Jupilles, 20% from Tronçais) for their malolactic fermentation, the wines remain on their lees throughout the aging process. During this period, they are never mechanically pumped but moved only by gravity flow. Each wine is bottled by hand, using gravity, barrel-by-barrel, without fining, filtration, racking or the addition of sulphur.
