Sauvignon Blanc Late Harvest, Casablanca Valley

Because of the very good weather conditions, no botrytis developed on the Sauvignon Blanc grapes in 2005. The major portion of the grapes were therefore left on the vine to dehydrate before harvesting, in order to concentrate the grape sugars.

After hand-harvesting the grapes were whole-cluster pressed. Some lots were frozen to concentrate the juice before fermentation. During this process, a highly concentrated juice was separated. Most lots were fermented at 59 to 63 degrees, with a few lots at 57 to 68 degrees, to give the final blend more sweet notes and roundness.

The wine is a pale yellow. It expresses a number of ripe fruits on the nose, such as apricot and pear, interlaced with subtle orange zest notes. Well integrated soft, sweet oak plays gently against this background. On the palate there is a full and unctuous quality with a beautiful texture that coats the tongue. The acidity balances the wine and produces a lovely harmony between the sweet notes and lively character of the wine.
