Bruno Paillard: Champagne, France
Blanc de Blancs Réserve Privée, Champagne
This Blanc de Blancs is made from 100% Chardonnay grapes grown on the famous “Côtes des Blancs” and on the lesser-known but equally fine “Côte de Sezanne”. For this wine, Bruno Paillard uses a fermentation method established for Champagne “Crémant” generations ago. When the still wine is decanted for its second fermentation in bottle, less sugar and yeast are added than is customary with most champagnes. The result is a less powerful bottle fermentation, producing a low pressure of approximately 3,5 kg (instead of 5 to 6 normally) and therefore less effervescence, with a creamy impression on the palate.
“Comes off as pure chardonnay, firm and supple, lasting on a note of fresh cream. There's a baking spice character in the aroma that adds detail to the wine. Focused along a clean line, this has the substance of a main-course wine, for roast pheasant or rabbit.” 91 Wine & Spirits, December 2008
“On the dry side, with a nice chalky intensity. Lemon verbena and mineral flavors take on a nuttiness as this remains firm through the long finish.” 90 Wine Spectator, September 2008
