Pinot Noir - Vin Gris El Jabali, Santa Rita Hills

For the Sanford’s famous Vin Gris the fruit is crushed, macerated overnight and then pressed. Fermentation then takes place in stainless steel with the press juice. As with several of the Alma Rosa wines, no malolactic fermentation takes place, in order to preserve the brightness and freshness of the fruit. Aging occurs in neutral French oak for six months.
